Baby Lettuce and Arugula Salad with Summer Tomato Dressing

green beans, trimmed
extra-virgin olive oil
red wine vinegar
large shallot, finely chopped
large beefsteak tomato
mixed baby lettuces
- Bring a medium saucepan of lightly salted water to a boil. Add green beans and cook 3 minutes, until crisp-tender. Drain; run under cold water.
- In a medium bowl, whisk together olive oil, vinegar, salt and pepper. Add shallot; grate tomato over bowl.
- In a large bowl, combine lettuces, arugula and string beans. Toss with dressing and serve immediately.
