Ingredients

  • 2 pounds skinless bone-in chicken thighs
  • 1/4 teaspoon salt
  • Black pepper
  • 1 tablespoon olive oil
  • 4 slices chopped bacon
  • 4 cloves sliced garlic
  • 1 sprig rosemary
  • 1 cup reduced-sodium chicken broth
  • 2 cans (15.5 oz each) drained white beans
  • 2 tablespoons chopped parsley

Directions

  1. Season thighs with salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken; cook 4 minutes per side. Place on a baking sheet; bake at 375 degrees for 20 minutes. Add bacon to skillet; cook 5 minutes, until crisp. Stir in garlic and rosemary; cook 1 minute. Pour in broth, white beans and parsley. Return chicken to skillet. Serve with sauteed spinach.
