  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/2 teaspoon garlic powder
  • 1/4-1/2 teaspoon red pepper flakes
  • 1/4 cup smooth peanut butter
Chicken:
  • 2 large boneless, skinless chicken breasts, about 10 ounces each, cut in half lengthwise
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 small red sweet pepper, cored, seeded and thinly sliced
  • 2 scallions, trimmed and thinly sliced
  • 1/2 pound steamed snow peas
