Chile-Cheddar Mashed Potatoes

baking potatoes, peeled and cut into 1-inch chunks
large cloves garlic, peeled and halved
2% milk, heated
sharp white cheddar cheese, shredded
can (4 oz)
diced mild green chiles
- Place diced potatoes and garlic in a lidded pot. Fill with cold water until potatoes are covered by 1 inch. Cover pot and bring to a boil. Reduce heat to a simmer and cook 10 minutes, until fork-tender.
- Drain potatoes and immediately return to pot. Stir in milk and butter; mash until smooth. Stir in cheese, chiles and salt.
