Ingredients

Cupcakes
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 10 tablespoons unsalted butter, softened
  • 1 cup plus 1 tbsp sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup milk
Frosting
  • 10 tablespoons unsalted butter, softened
  • 2 1/2 cups confectioners' sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pastel food colors

Directions

  1. Heat oven to 350 degrees. Line 18 muffin cups with baking liners. In a large bowl, combine flour, baking powder and salt. In another large bowl, use an electric mixer on high speed to beat butter and sugar until light and fluffy, about 4 minutes. Add eggs and vanilla, beating to combine. Reduce mixer speed to low, and alternately add flour mixture and milk.
  2. Pour batter into lined cups. Bake at 350 degrees for 25 minutes or until toothpick inserted in center comes out clean.
  3. Meanwhile, make Vanilla Frosting. In a large bowl, with electric mixer on high, beat butter until fluffy, about 4 minutes. Gradually add confectioners' sugar until combined. Add milk and beat until fluffy. Beat in vanilla; tint desired color(s). Frost cooled cupcakes as desired.
