Creole Sausage and Shrimp

- Coat slow cooker with nonstick cooking spray. Add 1 large chopped onion, 1 chopped green pepper, 2 ribs sliced celery, 2 diced carrots, 4 cloves chopped garlic, 1 can (14.5 oz) no-salt-added diced tomatoes, 3/4 cup reduced-sodium chicken broth and 2 tsp Creole seasoning. Stir to combine. Mix in 3 jalapeno-flavored fully cooked chicken sausages, sliced into 1/2-inch coins, and 1 pkg (10 oz) thawed frozen corn. Cover and cook on HIGH 6 hours or LOW for 8 hours. Stir in 1 tbsp tomato paste and 1 lb raw cleaned and deveined shrimp. Cover and cook 5 to 7 minutes, until shrimp are just cooked through. Serve with 3 cups cooked brown rice.
