Ingredients

  • 1 pound cucumbers, peeled
  • 1 avocado, pitted and peeled
  • 2 scallions, roughly chopped
  • 3 tablespoons lime juice
  • 1/2 cup cilantro
  • 1/2 teaspoon plus 1/8 tsp salt
  • 1/8 teaspoon cayenne pepper

Directions

  1. In a food processor, combine all ingredients with 1/2 cup cold water. Process until smooth.
