Cucumber, Snow Pea and Onion Salad

medium cucumbers, sliced 1/8 inch thick
snow peas, thinly sliced into strips (5 cups sliced)
thinly sliced sweet onion
fresh dill, chopped, plus more for garnish
white wine vinegar
- In a large bowl, toss together cucumbers, snow peas, onion, 1/3 cup of the dill and 1/2 tsp of the salt.
- In a separate bowl, mix sour cream, vinegar, sugar, pepper and remaining 1/2 tsp salt until smooth. Pour over vegetables and mix well. Cover and refrigerate 1 hour. Garnish with remaining dill.
