Ingredients

  • Berries:
  • 3 cups strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup sugar
  • 1/4 cup orange juice concentrate
  • 2 teaspoons orange zest
  • Dumplings:
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons orange zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 2 tablespoons unsalted butter

Directions

Berries:
  1. In a 9-inch covered skillet, mix together strawberries, blueberries, raspberries, sugar, orange juice concentrate and orange zest. Simmer, uncovered, for 3 minutes.
Dumplings:
  1. In a large bowl, mix together flour, sugar, orange zest, baking powder, baking soda and salt. Stir in buttermilk. Melt butter and stir into mixture just until a loose dough forms.
  1. Drop dough over berries in skillet in dumpling shapes, about 1 heaping tablespoon each.
  2. Cover and simmer over medium-low heat for 20 minutes without lifting cover.
  3. To serve, spoon dumplings and fruit into serving bowl. Top with vanilla ice cream, if desired. Makes 8 servings.
