Goat Cheese Dip

- Heat oven to 350 degrees . Combine 12 oz drained and chopped roasted red pepper, 8 oz chopped artichoke hearts, 2 cloves grated garlic, 2 tbsp chopped parsley and 1/4 tsp each salt and pepper. Beat 10 oz goat cheese, 1 cup unsweetened almond milk and 2 tbsp cornstarch until smooth. Fold in red pepper mixture. Pour into an 8 x 8-inch baking dish. Bake 25 minutes, then broil 4 to 5 minutes, until browned. Sprinkle with 1/2 tbsp chopped parsley. Serve with toasts and assorted vegetables for dipping.
- Stir in chopped lump crabmeat or shredded cooked chicken to make this dip even heartier.
