Winter Squash Ideas

Buttercup. Sweet Dumpling. Terms of endearment? Nope. They're the lesser-known winter squashes. Not sure how to cook them? Here's an easy prep technique and six delicious recipes that'll make winter squash a cold-weather staple.

Simple Squash Prep

For basic roasting, cut squash in half and scrape out the strings and seeds. Cut into large slices and place, unpeeled, on a lightly greased baking sheet. Brush lightly with olive oil; sprinkle with salt and pepper. Bake at 400 degrees F. for 30-45 minutes, until tender. Spoon flesh into a bowl, discard skin, and enjoy.
