How To Make Parchment Baked Fish
Learn how to make parchment baked fish for a healthy family dinner.
Cut 4 16x12 inch pieces of parchment. Fold in half crosswise. Draw a large heart half on each piece. Cut out each heart and unfold. Place a piece of fish near the fold of each heart. Spread 1 tbsp. of pesto over each piece. Top each filet with equal amounts zucchini, carrots, and shallots. Arrange potatoes over vegetables. Drizzle 1 1/2 tsp. broth over vegetables and top with salt, pepper, and a sprig of thyme. Start at top of heart and fold edges of parchment, sealing edges with narrow folds. Twist the end to seal. Bake at 425 degrees for 23 minutes.
