-Leeks are part of the onion family and they're often used the way onions are. They make a great base for soups, stews, and other long cooking dishes. And today, we're gonna show you how easy they are to prepare. Cut out the root and the top green leaves at the top then cut the leek in half lengthwise to about an inch from the base. Rinse under cold water to wash away dirt, making sure to fan out the leaves to clean thoroughly. Chop the leeks and place them in a bowl of cold water. Whirl them around so that any sand will sink to the bottom of the bowl. Lift the leeks out with your fingers and that's how easy it is to prepare leeks.
