-Roasted chicken is a favorite comfort food. Today, I'm going to show you how to make a perfect one every time. First, you need to select a chicken. Make sure it weighs 3 to 3-1/2 pounds. Remove the giblets often found in a bag inside the cavity and set them aside for another use. Let the chicken dry inside and out with paper towels. It's important the chicken comes to room temperature before roasting. Season the cavity with salt and pepper. If desired, place a couple pieces of onion, several cloves of garlic, and thyme inside. Tightly tie the legs together. Brush 1 tablespoon of softened butter on the skin then season well with salt and pepper. Place breast side up in a roasting pan fitted with a rack. Tuck the wings underneath the chicken. Roast it 450 degrees for 15 minutes to 1 hour or until a thermometer inserted into the thickest part of the thigh registers 165 degrees and that's how you roast a chicken.
