How to Make Stuffing and Gravy for Thanksgiving

Try these classic stuffing variations and foolproof perfect gravy for your Thanksgiving meal.
Pour drippings from pan into a fat separator, scraping up any browned bits in pan. Measure 1/2 cup de-fatted drippings and 3 tbsp turkey fat back into roasting pan or into a saucepan. For classic gravy, whisk 1/4 cup all-purpose flour into 3 cups turkey stock. Add to pan and simmer, whisking constantly, 3 minutes.
FRYING OR GRILLING YOUR TURKEY?
Melt 3 tbsp butter and 1/2 tsp gravy starter (such as Kitchen Bouquet) in a medium saucepan. Continue with recipe, increasing turkey stock to 31/2 cups.
WANT TO GO GLUTEN-FREE?
In a small dish, mix 3 tbsp cornstarch with 1/3 cup turkey stock. Stir into pan with 3 cups turkey stock in place of flour mixture. Bring to a simmer; cook 2 minutes. For all recipes, adjust seasonings to taste, adding 1 tbsp chopped fresh sage, parsley or thyme leaves, if desired.
IS YOUR GRAVY TOO THIN?
Whisk a few more tablespoons all-purpose flour into 1/3 cup water and whisk into pan.

Force gravy through a mesh strainer, then whisk until smooth.
