  1. 1 of 3 Heat oven to 425 degrees .
  2. 2 of 3 Trim Brussels sprouts and halve. On a rimmed baking sheet, toss with 3 tbsp oil, the chile powder and 1/2 tsp salt. Roast 15 minutes. Stir in pumpkin seeds, 1 tbsp oil and 1/4 tsp salt. Roast 5 minutes, until tender.
  3. 3 of 3 Toss Brussels sprouts with cilantro, cheese and lime juice.
