Angry Bison Burger
- 1 of 1 Add 2 tbsp unsalted butter to a skillet over medium-low. Add 1 large sliced yellow onion and cook 20 minutes, stirring frequently, until onions begin to caramelize. Season with 1/4 tsp salt and cover. Heat grill to medium-high. In a bowl, combine 1 lb ground bison or grass-fed beef, 1 can (4 oz) diced hot Hatch chiles, 1/3 cup chopped cilantro, 2 tbsp sliced scallions and 1/2 tsp salt. Form into 4 patties. Grill 4 minutes, flip and add 1 oz sliced pepper Jack cheese to each burger. Grill 4 more minutes for medium-rare (135 degrees ). Serve on whole wheat buns with caramelized onions and tomatillo salsa.
