Apple-Corn Muffins

  1. 1 of 3 Heat oven to 400 degrees F. Coat the cups of a jumbo muffin pan with nonstick cooking spray.
  2. 2 of 3 In a large bowl, combine muffin mixes, eggs, milk, grated apple, 2 tablespoons of the sugar and the pumpkin pie spice. Stir until moistened, then divide evenly between prepared muffin cups, a heaping 1/2 cup batter in each. Sprinkle tops of muffins with remaining tablespoon sugar and the chopped nuts.
  3. 3 of 3 Bake at 400 degrees F for 18 to 20 minutes until lightly browned around edges. Slide a thin knife between muffin and pan; gently lift muffins from pan.
