  1. 1 of 2 Blanch tomatoes in boiling water, 5 minutes. Drain. Finely chop. Mix with mayonnaise. Spread over rolls. Place cheese on bottom half.
  2. 2 of 2 Broil 3 minutes until cheese melts. Top with arugula and roll tops. Makes 2 mini panini.
