  1. 1 of 5 Heat oven to 350 degrees . Coat two 9-inch round cake pans with nonstick cooking spray. Line bottoms with wax paper; coat paper with cooking spray.
  2. 2 of 5 Combine flour and next 5 ingredients. In a large bowl, beat sugar and next 4 ingredients until smooth. Beat in flour mixture, alternating with buttermilk, in 3 additions. Beat 2 minutes. Fold in chopped apple. Divide between prepared pans.
  3. 3 of 5 Bake 27 to 30 minutes, until cake springs back when pressed lightly. Cool 10 minutes. Turn onto a cooling rack, remove wax paper and cool completely.
  4. 4 of 5 Place one cake layer on a plate and frost top with half the frosting. Add second layer and frost top with remaining frosting.
  5. 5 of 5 Just before serving, toss sliced apple with brandy and pile on center of cake.
