  • Coat slow cooker bowl with nonstick cooking spray.

  • Place onion, carrots and garlic in slow cooker. Add chicken evenly over top. Drain pineapple and set aside, reserving 1/4 cup of the juice. Whisk juice, cornstarch, sugar, vinegar, ketchup and soy sauce; pour over chicken.

  • Cover and cook on HIGH for 4 hours or LOW for 6 hours.

  • Stir in red pepper, snow peas, salt and pineapple during last 30 minutes.

  • Serve with rice noodles and top with almonds.

For easy cleanup:

Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
