Asparagus, Zucchini and Leek Kugel
Heat oven to 375°. Heat 2 tbsp oil in a large frying pan over medium heat. Add leek and onion; cook 3 minutes. Add garlic and asparagus; cook 4 minutes. Turn off heat. Add zucchini, spinach and scallions and stir to combine. Scoop into a large bowl and let cool 15 minutes.Advertisement
Add basil, eggs, matzoh meal, salt and pepper; stir to combine. Grease a 13 x 9 x 2-inch baking dish with 1 tbsp oil. Scoop batter into baking dish and spread evenly. Bake kugel at 375° for 45 minutes or until browned on top.
