Au Gratin Potatoes

  1. 1 of 1 Coat a 4-quart slow cooker with nonstick cooking spray. In a saucepan, melt 3 tbsp unsalted butter over medium. Whisk in 3 tbsp all-purpose flour; cook 2 minutes. Whisk in 3 cups milk. Bring to a simmer; cook, whisking, 3 minutes. Stir in 1/2 tsp each salt and chipotle chile powder, 1/4 tsp black pepper and 2 cups shredded Gruyere cheese. Peel 3 lbs Yukon gold potatoes and cut into 1/4-inch-thick slices. Layer half in slow cooker and season with salt and black pepper. Top with 1 thinly sliced medium onion and half the cheese sauce. Layer remaining potatoes, season with salt and pepper and top with remaining sauce. Sprinkle with 1 cup shredded Gruyere. Drape a towel over slow cooker and cover with lid. Cook on LOW for 5 hours.
