  1. 1 of 1 In a large saute pan, cook bacon over medium heat for 5 minutes, until crispy. Remove with a slotted spoon, setting aside 1 tbsp bacon. Mix remaining bacon with milk, corn, cornmeal, flour, chives, egg, salt and pepper. Heat bacon drippings in the same pan over medium heat. Drop 2 tbsp batter into pan to form each fritter. Working in batches of 3 or 4 fritters, cook 2 minutes, until lightly browned, then turn carefully with a spatula and cook 2 more minutes. Add oil to pan as necessary between batches. Serve warm, topped with creme fraiche, reserved bacon and more chopped chives.
