  1. 1 of 1 Bring a large pot of salted water to a boil. Add 1 lb penne pasta and cook 11 minutes. Drain, reserving 3/4 cup pasta water. Meanwhile, melt 2 tbsp butter over medium-high. Saute 2 large peeled, cored and sliced Granny Smith apples, 12 oz kielbasa, cut into coins, and 1 thinly sliced medium onion for 5 minutes, until softened and lightly golden. Toss cooked pasta with apple mixture, reserved pasta water, 2 tbsp honey mustard and 1/4 tsp each salt and black pepper. Fold in 1 cup shredded Gouda cheese and transfer to a greased 3-quart baking dish. Top with 1 more cup shredded Gouda and 1/3 cup grated Parmesan. Bake at 350 degrees for 30 minutes. Broil 4 minutes, if desired, to brown top.
