BBQ Beef Brisket
- 1 of 1 Coat slow cooker with nonstick cooking spray. Combine 2 tbsp packed dark brown sugar, 1 tbsp Italian seasoning, 1 tsp onion powder, 1/4 tsp salt and 1/4 tsp black pepper; rub onto a 3 lb piece of beef brisket and place in slow cooker. Whisk 2 1/2 cups beef broth, 3 tbsp molasses and 2 tbsp Worcestershire sauce; add to slow cooker. Cover and cook on HIGH for 6 hours or LOW for 8 hours. Remove brisket and shred. Strain liquid into a saucepan. Combine 1/4 cup water, 3 tbsp cornstarch and 1 tbsp white vinegar; add mixture to saucepan and bring to a boil. Cook 3 minutes, until thickened. Combine 5 cups sauce with brisket in a large bowl; cover and let stand 15 minutes. Split 8 onion rolls and fill with brisket. Serve with coleslaw or salad, if desired.
