BBQ Chicken Sammies
Heat broiler. Cut each breast half in half crosswise and pound lightly to 1/2-inch thickness. Spread out onto a foil-lined rimmed baking sheet and spread 1 tbsp barbecue sauce over each. Season with 1/4 tsp black pepper and broil, 3 inches from heat, for 10 minutes.Advertisement
Meanwhile, heat oil in a large nonstick skillet over medium. Add bell pepper and onion and sauté 10 minutes. Stir in 1/4 cup plus 2 tbsp barbecue sauce and season with salt and 1/4 tsp black pepper.
Remove baking sheet from broiler and divide veggie mixture among chicken pieces. Top each with a slice of cheddar and broil 1 minute to melt cheese. Transfer to buns and serve.
