Jalapeno Corn Bread

  1. 1 of 4 Place drippings in a 12-inch cast-iron skillet. Place in oven. Heat oven to 450 degrees F.
  2. 2 of 4 Combine cornmeal, flour, salt and baking soda in large bowl. Stir in eggs, buttermilk and jalapenos just until blended.
  3. 3 of 4 Using hot pads, remove skillet from oven. Pour drippings into batter, stirring just until combined. Pour batter into pan; stir. Return to oven.
  4. 4 of 4 Bake in 450 degree F oven for 15 minutes or until a wooden pick inserted in center comes out clean. Serve hot with butter. Makes 12 servings.
