Trim Bean Enchiladas
- 1 of 4 Combine refried beans and half of the Cheddar cheese in a small bowl.
- 2 of 4 Pour half of the enchilada sauce in bottom of 8 x 8 x 2-inch baking pan.
- 3 of 4 Spread refried bean mixture down center of each tortilla, dividing bean mixture equally. Fold both sides of each tortilla up and place, seam side down, in sauce in baking pan. Top with remaining sauce and cheese.
- 4 of 4 Bake in 350 degree F oven 20 minutes or until heated through and the cheese is bubbly. Top with the sour cream, salsa and green onion if desired. Makes 4 servings.
