Beet Hummus

As easy to make as the basic hummus, just bolstered with sweet, bold-colored veggies.

  1. 1 of 2 Prepare Basic Hummus or put purchased hummus in food processor or blender. Finely dice 1/4 cup of the beets and reserve. Coarsely chop remaining beets and add to hummus along with dill and cumin (if using). Puree until smooth.
  2. 2 of 2 Transfer hummus to a bowl. Scatter finely diced beets on top of hummus with a little extra dill. Makes 2 cups.
