- 1 of 1 In a large stockpot, combine 2/3 cup kosher salt, 2/3 cup firmly packed dark brown sugar, 1 cup hot water, 3 cups cold water, 1 sliced onion, 2 cloves crushed garlic, 1 sliced jalapeno and 12 crushed black peppercorns. Place fresh (not frozen) turkey in pot. Add enough water to cover by 1 inch. Cover and refrigerate overnight, but no longer than 8 hours. Dry turkey inside and out, including cavity, before cooking.
