Broccoli Shrimp Scampi
- 1 of 1 Bring a large pot of lightly salted water to a boil. Add 3 cups broccoli florets and cook 3 minutes. Scoop broccoli from water and transfer to a 12-inch skillet, along with 3 tbsp olive oil. Return water to a boil and cook 1 lb rotini or radiatore pasta per pkg directions (about 12 minutes). Drain and transfer to a serving bowl. Toss with 2 tbsp unsalted butter, 2 tbsp lemon juice and 1/4 tsp garlic salt. Keep warm. Meanwhile, heat broccoli and oil over medium-high until sizzling. Add 4 minced cloves garlic and 1 1/2 lbs cleaned medium shrimp. Cook 3 to 4 minutes, until shrimp are opaque. Add 2 tbsp lemon juice, 1/2 tsp salt and 1/8 tsp black pepper. Stir in 3 tbsp Italian seasoned bread crumbs and serve over pasta.
