Brussels Sprout and Bacon Slaw
- 1 of 1 Trim 1 3/4 lbs Brussels sprouts. Insert a thin slicing blade into a food processor. With machine running, add Brussels sprouts and shave into thin slices. Alternately, thinly slice sprouts with a sharp knife. Heat a large stainless skillet over medium-high and add 6 oz diced bacon. Cook 5 minutes, stirring, until cooked through. Remove to a plate with a slotted spoon. Add shredded sprouts to bacon drippings. Saute 3 to 5 minutes, seasoning with 1/2 tsp each salt and black pepper. Add bacon back to skillet; toss to combine. Sprinkle with 3 tbsp cider vinegar.
