Buffalo Chicken Chili

Slow Cook on HIGH for 4 hours or LOW for 6 hours



  1. 1 of 6 Coat slow cooker bowl with nonstick cooking spray.
  2. 2 of 6 Heat a large nonstick skillet over mediumhigh heat; add chicken and cook 5 minutes, stirring occasionally, until browned. Drain excess fat and spoon chicken into slow cooker. Stir in onion, carrots, celery, garlic, tomatoes, chili powder, cumin, oregano and cayenne.
  3. 3 of 6 Cover and cook on HIGH for 4 hours or LOW for 6 hours. Add beans during last 30 minutes.
  4. 4 of 6 Stir in blue cheese, vinegar and salt. Serve with celery and carrot sticks, if using.
  5. 5 of 6 Note: Sub in lean ground beef, if desired.
  6. 6 of 6 Note: Add 1/2 cup cooked white rice per serving for an additional 124 calories.
