  1. 1 of 2 Heat oven to 425 degrees. In a bowl, combine flour, baking powder, baking soda and salt. Add butter, mixing with hands until pea-size. Make a well and pour in buttermilk. Stir until combined. Let rest 5 minutes.
  2. 2 of 2 Roll out dough to 3/4 inch on a floured surface. Cut out 8 or 9 biscuits with a 2 1/2-inch round cookie cutter, re-rolling as necessary (use all the dough). Place on a parchment-lined baking sheet and bake at 425 degrees for 10 to 15 minutes, until browned. Cool completely, then store for at least one day before making dressing.

Dressing

  1. 1 of 3 Heat oven to 400 degrees. Cut biscuits into 1-inch cubes; set aside.
  2. 2 of 3 In a large cast-iron skillet, cook sausage over medium-high heat for 6 to 8 minutes, breaking up with a spoon, until browned. Reduce heat to medium and add butter. Stir in celery, onion and garlic. Saute 3 to 5 minutes, until softened. Stir in thyme and sage. Remove from heat.
  3. 3 of 3 In a large bowl, whisk egg whites until foamy. Whisk in chicken stock, buttermilk, salt and pepper. Fold biscuits and sausage into egg white mixture. Spray skillet with nonstick cooking spray. Pour stuffing into skillet and press down. Cover with foil and bake at 400 degrees for 25 minutes. Uncover and bake another 10 minutes.
