  1. 1 of 2 Combine rice, 2 cups water, 1 tsp of the oil, the onion, garlic, 1/2 tsp of the salt and the pepper in a small pot. Bring to a boil. Reduce heat to medium-low, cover and cook 20 minutes, until water is absorbed. Stir red beans into pot and set aside.
  2. 2 of 2 Meanwhile, season flounder with remaining 1/4 tsp salt and the Cajun spice blend. Heat remaining 1 tbsp oil in a nonstick skillet over medium-high heat. Cook flounder 2 minutes; flip and cook another 1 to 2 minutes. Serve over red beans and rice with Collard Greens and Pecans.
