Cajun Shrimp Tacos
- 1 of 3 Combine cabbage, grated carrot and scallions in a medium-large bowl. In a small bowl, whisk mayonnaise, vinegar, mustard, sugar, salt and pepper until smooth. Pour over cabbage mixture and toss to combine. Set aside until assembling tacos.
- 2 of 3 In a medium bowl, toss shrimp with Old Bay Seasoning. Heat oil in a large stainless skillet over high heat. Add shrimp and cook, stirring frequently, 3 minutes, until cooked through. Remove from heat and toss with lemon juice.
- 3 of 3 Wrap tortillas in damp paper towels and microwave 1 minute, until heated through. Spoon a scant 1/3 cup slaw onto each tortilla and top with 4 to 5 shrimp.
