  1. 1 of 3 Heat oven to 350 degrees . In a large skillet, heat 2 tsp oil over medium-high and add sausage. Cook, stirring, for 5 minutes or until sausage is brown. Remove with a slotted spoon to a large bowl. Add onion to pan; cook 5 minutes. Add celery and garlic; cook 3 to 5 minutes. Add to bowl with sausage and mix in stock, egg, bread crumbs and red pepper.
  2. 2 of 3 Create a large pocket in each pork chop with a small knife, cutting meat in half just to the bone. Fill each chop with sausage stuffing and season outside with plenty of salt and pepper.
  3. 3 of 3 In a large ovenproof skillet, sear chops in oil over medium-high for 3 minutes per side (turning once) until golden brown on both sides; work in batches if necessary. Place skillet in oven for 25 to 30 minutes, until chops are cooked through.
