• Melt 2 tbsp butter in a large stainless skillet over medium heat. Add onion and salt. Reduce heat to medium-low; cook, stirring frequently, 10 minutes. Sprinkle with sugar and cook 10 minutes. Remove from pan to a bowl.

  • Add 1 tbsp butter to pan; increase heat to medium. Stir in mushrooms and sauté 4 minutes, until browned.

  • Spread 1 tbsp goat cheese on each crust. Top with 1/3 cup shredded cheese, 1/4 of the onions and 1/4 of the mushrooms. Return pizzas to grill, cover and cook 2 minutes. Sprinkle with oregano and salt and pepper.
