  2. 2 of 4 In a small bowl, combine first 4 ingredients. Place catfish fillets on a foil-lined rimmed baking sheet and rub with oil mixture. Roast 12 to 14 minutes, until temperature reaches 145 degrees .
  3. 3 of 4 In a medium bowl, combine vinegar and sugar. Add carrot, radish and cucumber and toss to coat.
  4. 4 of 4 Combine sour cream and sriracha and spread on cut side of baguette bottoms. Layer with catfish, pickled vegetables, cilantro leaves and as much jalapeno as desired. Cover with baguette tops.
