• Heat oven to 375°.

  • In a small bowl, combine first 4 ingredients. Place catfish fillets on a foil-lined rimmed baking sheet and rub with oil mixture. Roast 12 to 14 minutes, until temperature reaches 145°.

  • In a medium bowl, combine vinegar and sugar. Add carrot, radish and cucumber and toss to coat.

  • Combine sour cream and sriracha and spread on cut side of baguette bottoms. Layer with catfish, pickled vegetables, cilantro leaves and as much jalapeño as desired. Cover with baguette tops.
