  • Combine cubed butter and 1/3 cup water in a small saucepan. Heat until butter melts. Remove from heat and cool to 120° to 130°. Meanwhile, combine 1/2 cup each of both flours with sugar, yeast and salt in a large bowl.

  • Once butter mixture has cooled, add to flour mixture; stir vigorously with a wooden spoon until combined.

  • Whisk eggs, then beat into flour mixture. Slowly add remaining flours until dough starts to pull away from bowl.

  • Transfer to countertop and knead in any flour remaining in bowl. Knead 5 min, until smooth and elastic. Place in a well-greased bowl, turning to coat. Cover with a clean kitchen towel and let rise in a warm place until doubled, 1 1/2 hr.

  • Gently punch down dough and roll to a 20 × 9-inch rectangle. Cut long side into 6 strips, and cut each strip crosswise into 3 pieces, for a total of 18 pieces.

  • Grease an 8 1/2 x 5 1/2-inch loaf pan with butter and stand it on a short end. Begin layering: Start with 1 piece of dough followed by a slice of cheese and about 1 tsp each bacon and scallions. Repeat with all the dough, cheese, bacon and scallions, ending with a piece of dough.

  • Turn pan right side up and shake gently so that layers spread out slightly. Cover with foil and let rise in the fridge overnight.

  • Remove loaf from fridge and heat oven to 350°. Uncover loaf and bake 35 to 40 min, until browned and bread sounds hollow when tapped. Remove from pan and let cool 10 min. Souped-Up Lunch: This bread is also awesome alongside soup or chili. To make it in one day instead of overnight: After layering, let rise in a warm place for 1 hour, then bake. Sweeten the Pot: Instead of keeping things savory, brush the dough with melted butter and liberally sprinkle with cinnamon sugar before cutting and stacking.
