Chicken and Apple Slaw

  1. 1 of 2 In a very large bowl, combine first 5 ingredients. Toss with 1/2 tsp salt.
  2. 2 of 2 In a medium bowl, whisk vinegar, mustard, sugar, pepper and remaining 1/2 tsp salt. While whisking, add EVOO in a thin stream. Add to slaw and toss to combine.

Shredded Chicken 3 Ways

  1. 1 of 3 Pile into taco shells and top with salsa, cheese and shredded lettuce.
  2. 2 of 3 Stir into mac and cheese along with cooked broccoli.
  3. 3 of 3 Make chicken salad and stuff into centers of halved avocados.
