Chicken and Bacon Stuffed Potatoes
- 1 of 1 Bake potatoes at 400 degrees for 50 minutes or until tender. Cut in half lengthwise and spoon flesh into a bowl. Mash with milk, cream cheese, 1 oz feta, scallions, salt, oregano and pepper. Stir in chicken and half of bacon. Fill each potato skin with an equal amount of potato and chicken mixture. Top each with 1 oz feta and remaining bacon. Bake at 400 degrees for 20 minutes. Serve with Roasted Zucchini and Tomatoes, if desired.
