Chicken and Hummus Bowl
- 1 of 1 Blend 1 tsp ground turmeric, 3/4 tsp salt, 1/2 tsp ground cumin, 1/4 tsp cinnamon and 1/4 tsp cayenne. Dice 1 lb boneless, skinless chicken breasts into 1/2-inch cubes and toss with half the spice blend. Heat 1 tbsp extra-virgin olive oil in a large skillet. Add chicken and saute 3 minutes, until cooked through. Remove with a slotted spoon. To the same skillet, add 1 tbsp extra-virgin olive oil, 1 large diced zucchini and remaining spice mixture. Cook 5 minutes, until softened. Serve chicken and zucchini in a bowl over rice with a scoop of hummus, diced tomatoes, sliced cucumbers and, if desired, harissa and whole wheat pitas.
