Chicken, Beef and Lamb Koftas with Harissa-Yogurt and Mint-Scallion Sauces

Place chicken, beef and lamb in 3 separate bowls. In a small bowl, combine next 6 ingredients and divide evenly among bowls. Divide mint evenly among bowls. Mix each until well combined.
Starting with chicken, form meat around skewers into 8 oblong koftas (they will weigh about 2 oz each). Place on a baking sheet and refrigerate while forming beef and lamb koftas. Brush all 24 koftas on both sides with oil.
Transfer baking sheets to oven and broil 5 minutes. Carefully remove pans from oven and rotate from top to bottom and front to back. Broil another 5 minutes, then transfer beef and lamb to a platter. Broil chicken 2 to 3 minutes, until temperature reaches 165°. Serve with sauces.
Harissa-Yogurt Sauce: In a bowl, stir 1 cup plain Greek yogurt, 2 tbsp water, 1 tbsp each harissa paste and lemon juice, 1/2 tsp lemon zest and 1/4 tsp salt until smooth.Mint-Scallion Sauce: In a food processor, combine 2 cups packed fresh mint, 2 roughly chopped scallions, 1 large clove garlic, 2 tbsp lemon juice and 1/2 tsp salt. While processor is running, add 1/2 cup extra-virgin olive oil in a thin stream and process until smooth.
