  1. 1 of 1 In a large cast-iron skillet, saute thinly sliced medium yellow onions in unsalted butter over medium-low heat 20 minutes, stirring frequently, until browned. Season with 1/4 tsp salt; remove to a bowl. Combine ground chicken with grated yellow onion, Worcestershire sauce, garlic powder, ground mustard, 1/2 tsp salt and black pepper. Form into four 1-inch-thick patties. Add vegetable oil to the same skillet. Cook patties 4 to 5 minutes per side, until internal temperature reaches 165 degrees . Remove to a plate. Butter the outside of seeded rye bread. On each of 4 bread slices, place a burger patty, 1/4 of the onions and 1 slice Swiss cheese and top with another bread slice. Add all 4 patty melts to pan, cover with aluminum foil and press down with another heavy pan. Cook 3 minutes per side, until bread is toasted and cheese is melted.
