Chicken in a Flash

  1. 1 of 2 Heat oven to 375 degrees . Add oil to a large stainless skillet and heat over medium-high heat. Add still-frozen chicken breasts with tongs (oil may spatter), cover with foil and cook 3 minutes. Uncover and sprinkle with half the salt and pepper. Flip chicken with a spatula and sprinkle with remaining salt and pepper. Cover and cook 2 minutes.
  2. 2 of 2 Transfer chicken breasts to a small baking dish and add broth. Cover tightly with foil and bake at 375 degrees for 25 minutes or until internal temperature registers 165 degrees .

Pan Sauce

  1. 1 of 1 Heat olive oil in same skillet over medium heat. Add shallot and saute 3 minutes. Stir in white mushrooms and season with salt and black pepper. Cook 4 minutes. Sprinkle with all-purpose flour and whisk in no-salt-added broth and fresh oregano. Cook, scraping browned bits from bottom of pan, 3 minutes. Slice cutlets and spoon sauce over them. Serve with Spaghetti Squash and a side of orzo or quinoa.

  1. 1 of 1 Cook orzo or quinoa as per package directions. Toss with oil or butter and additional oregano, if desired.
