  1. 1 of 3 Heat grill or grill pan to medium. Rub chicken with oil, then season with 1/2 tsp salt and 1/4 tsp pepper. Grill 12 to 14 minutes per side, until internal temperature reaches 165 degrees on an instant-read thermometer.
  2. 2 of 3 Meanwhile, combine sour cream, 1/2 cup pepitas, the scallion, garlic, 1/4 tsp salt and 1/8 tsp pepper in a blender. Process until smooth.
  3. 3 of 3 Spoon sauce over chicken. Scatter 1 tbsp pepitas over top.
