Meanwhile, combine sour cream, 1/2 cup pepitas, the scallion, garlic, 1/4 tsp salt and 1/8 tsp pepper in a blender. Process until smooth.
Spoon sauce over chicken. Scatter 1 tbsp pepitas over top.
