Apricot-Ginger Wings

  1. 1 of 4 Heat oven to 450 degrees F. Line 15 x 10-inch jelly-roll pan with foil. Coat foil with nonstick cooking spray.
  2. 2 of 4 In food processor, combine preserves, crystallized ginger, garlic and salt. Process until ginger and garlic are finely chopped. Remove to medium bowl. Stir in vinegar. (You should have 1 cup glaze.)
  3. 3 of 4 Cut wings in half at joint. Place on prepared pan. Brush with 1/2 cup apricot-ginger glaze. Roast 15 minutes. Remove pan from oven. With tongs, turn wings over. Brush wings with remaining glaze. Roast 15 minutes more or until juices run clear.
  4. 4 of 4 To crisp skin, if desired, increase oven temperature to broil. Broil wings for 1 to 2 minutes or until skin is crisp.
